Instructions
Adjust oven rack to middle position and heat oven to 475°F/ 245°C
In a large Mixing bowl, mix the dry ingredients together.
Melt the butter.
Add the butter to the cream and warm in the microwave for about 60 seconds (you are looking for a temperature between 95°F/35°C-100°F/37°C).
Mix the wet ingredients into the flour mixture until just incorporated and batter pulls away from sides of bowl.
Using a greased ice cream scoop or ¼-cup dry measuring cup, drop mounds of the mixture onto a greased baking tray (around 2 inches apart)
bake in the oven for 10 to 12 minutes until golden.
Serve warm.
Notes
Don’t use milk or half and half
in place of the cream Half and half is not suitable as the high fat content is needed for a light, tender result.
This recipe comes together fast
, so for the sake of efficiency, start heating your oven before collecting your ingredients.
Bake these drop biscuits on the top rack
of the oven to ensure an even texture.
There’s no need to worry about over-mixing this dough.
The cream provides plenty of fat to coat the flour, so mix until it’s perfectly smooth.
Once you’ve dropped the dough
onto the baking tray you can shape them by hand to make them neater
.
Allow the drop biscuits to cool
for around five minutes before eating.
