A good marinade can take your chicken wings to the next level. This sauce is the perfect balance of savory and sweet - A combination to keep you reaching for more.
Whisk together the soy sauce, olive oil, and corn starch until smooth in a large bowl. Mix the brown sugar, vinegar, mustard, garlic, and ginger. Set aside ½ cup of mixture.
Add the chicken wings and coat in the marinade. Cover with plastic wrap, and marinate in the refrigerator for 1-8 hours. Remove the wings leaving as much of the marinade behind as possible.
In a small saucepan over medium heat, bring the reserved marinade to a boil, then reduce heat and let simmer until thickened. Allow to cool and store in the fridge until ready to use.
To Oven Bake
Preheat an oven to 425°F
For crisp results, dry the chicken wings before air frying (this step is optional).
Bake the wings on a sheet pan for 30 minutes (for extra crispy wings, place a wire rack in the baking sheet and cook the wings on the rack) then turn the wings over and cook the other side for another 20 minutes.
Turn the oven to broil. Brush sauce over wings and broil until caramelized, and the internal temperature of the wings reads 165°F.
To Grill
Preheat a gas grill to medium heat (about 350°F).
Place the wings on the grill. Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
Brush the sauce onto the wings and grill until the skins crisp, 1 to 2 minutes per side, or until the internal temperature reads 165°F.
To Air Fry
Preheat the airfryer to 360°F
For crisp results, dry the chicken wings before air frying (this step is optional).
Spray the air fryer basket or rack with cooking spray place the wings in the fryer basket or rack, so they are not touching (if necessary to fit in a basket, line them standing upright along the sides of the basket).
Cook for 15 minutes.
Flip the wings with tongs, brush with the sauce, and cook for 15 minutes more or until the outsides are extra-crispy, and the internal temperature reads 165°F.

For Crispy Wings
The best way to keep them crispy is to make sure the wings are spaced out enough to allow air circulating around them as they cook and preventing steam from forming.
You can also skip the step of brushing on the sauce and serve the sauce on the side for dipping instead. If you do this, just be sure to cook the chicken until the internal temperature reads 165°F
