I hope you’re all doing well and ready to catch up on what’s been happening in my life. I’ve decided to start these Monday Morning Catch-Up blog posts so we can connect on a more personal level. Sure, my recipes are the star of the show, but I want you to get to know the real me too!
You have been wonderful, loyal readers and after last Monday’s post, I want to continue to connect and share who I am with you so you know the person behind the food.
So, on Monday mornings I’m going to write a post to just catch up and let you know what’s happening – just in case you’d like to know! 🙂
As some of you may know, I’m originally a Jersey Girl, but fate had other plans for me. Fifteen years ago, I fell head over heels for an Englishman, and we embarked on a whirlwind romance that led me to the UK. We’ve had an amazing life together, and our pride and joy is our incredible 10-year-old son.
Life took an unexpected turn when our little boy was diagnosed with High Functioning Autism Disorder, also known as Aspergers or ASD. It was a tough pill to swallow, and it changed everything for us. As parents, we had to navigate uncharted waters, facing challenges we never anticipated. But it’s been a journey of growth and understanding, and we’ve learned so much along the way.
A pivotal moment came during a visit to NJ in the Summer of 2017. It was heartwarming to see our son thriving in that familiar environment. He connected with people, smiled, and engaged in conversations like never before. It was truly a sight to behold. For a child who usually tries to shield his emotions, it was overwhelming to see him feeling so comfortable and at ease with others.
That visit made us realize that we needed to make a big decision – to move back home for good. Life in England had its challenges, and I often felt isolated with limited social interactions. Working from home has its perks, but it also meant having little opportunity to connect with others. Plus, no family around meant no babysitter or date nights – not an easy situation for any parent!
The idea of going back home, where family and dear friends reside, seemed like the right choice. We need their support as we continue this journey with our boy, and let’s be honest, a helping hand with babysitting is always a bonus! So, in just three short months, we’ll be making the big move – going home!
But before that, we have one major hurdle to overcome – my husband’s green card interview. I can’t even begin to describe how nervous I am about it! This interview is the only thing standing in the way of our new adventure, and I’m sending all the good vibes and crossed fingers I can muster. Wish us luck, guys!
I’m excited about what lies ahead and to share this journey with all of you. Life may throw us curveballs, but it’s the love and support we get from our dear ones and our extended family of readers that keep us going strong.

I am so proud of the woman you have become against all odds living so far from your people. My son has ADHD. I know hearing that your child is different is such a blow. Having a support system is vital. So happy for you that you will be home!

Erren, the best of luck with the move and getting the family support that is so necessary when you have a special child. I have heard children with ASD are able to thrive very well. My friend has a son with ASD and he just started his freshman year at Cornell. When my son was diagnosed years ago with Tourette Syndrome, part of my family turned their backs on us. I found support through the Tourette Syndrome Association and that helped us. We also found great support with the school system.

Hi Carol, Thank you for sharing your story. It can be rough getting acceptance for a child that’s different. I try not to pay too much attention to that kind of negativity and I’m getting better at it! 🙂 I had an ASD counselor I worked with for the first year and she helped a lot and I also have some close friends help me through. I look very forward to everyday support that will come with going home. Thank so much for the well wishes!

This was so heartwarming and lovely to read, thank you for being open and honest with us about how you feel, it must be hard being away from family, I don’t know what I would do without mine! Being a single mum with two children myself, one who has daily struggles also can be hard, never knowing if you’re doing the right thing or if you’ve chosen the right thing for them is a burden itself. It sounds like your little boy is a very lucky one to have a Mum that clearly loves and puts all his needs first! I hope America is everything you hope it will be!
