I make this dish a lot! Roasting green beans brings their best flavors. They get a little crispy, which I love, and the flavor is more concentrated than it would be if you steamed or sautéed them.
And the crisp garlic and parmesan cheese just elevates them to a whole new level! If you’re new to roasting green beans, you have to try it! Once you do, this recipe will go into your regular rotation!
Green Bean Buying Guide
Look for brightly colored firm beans (they should snap easily when bent) and avoid any with visible seeds, blemishes, or signs of wrinkling.
How To clean and Trim Fresh Green Beans
- To clean just put them in a colander and run them under cold water (just be sure you dry them thoroughly before roasting).
- Trimming is simple you just cut the ends off. You can cut both ends or leave the tips on to save time.
- To easily trim several at a time, just grab a bunch, line the ends up, and cut off the tips in one slice. Then line up the ends and repeat.
Time Saving Tip: Most grocery stores sell bags of green beans that have already been trimmed and cleaned. These ready prepped vegetables are great for nights you’re short on time!
How To Make Oven Roasted Green Beans
- Wash, dry, and trim the green beans.
- Toss with extra-virgin olive oil, garlic, Parmesan cheese, salt, and pepper.
- Roast until crisp and tender.
- Serve topped with Parmesan cheese.
Step By Step Instructions
Wash the green beans and leave to dry completely. Trim the ends and add to a large oven-safe dish.
Add the garlic. Toss with the extra-virgin olive oil, salt, and pepper and spread out evenly in the dish.
Add freshly grated parmesan cheese.
Toss to coat well.
Roast, until lightly caramelized, crisp and tender, about 15-25 minutes.
Serve with plenty of freshly grated Parmesan cheese.

- Don’t have time to work with fresh garlic? This might surprise you, but I make this all the time using garlic powder.
